Red Snapper Ceviche Recipe: Step-by-Step Guide
- Step 1: Marinate and Refrigerate the Fish
To start off your snapper ceviche recipe, mix the snapper pieces, lemon juice, sugar, garlic, red pepper flakes, and lime juice in a bowl, preferably a glass or ceramic one, and cover it. You want to marinate the fish which is why it’s crucial that the snapper pieces float in the juice mixture. This preparation should be placed in the refrigerator where it should cool for about an hour and 45 minutes.
- Step 2: Take the Fish Out and Strain
You don’t cook the fish per se, but the marinating in the fridge for a while will make the fish white and firmer to the touch. You’ll know that the process is done once you confirm that there are no translucent fish pieces. So, once this step is done and over with, get the bowl out of the fridge, strain the fish completely, and get rid of the juice.
- Step 3: Mix the Rest of the Veggies and Herbs
Take another bowl where you’ll mix the tomatoes, cilantro, oil, onion, and avocado and toss it all together with the cooled and marinated red snapper pieces. Let it all sit for at least 10 minutes.
- Step 4: Season to Taste and Serve
Add salt according to your taste, stir everything once again, and place your red snapper ceviche in a large shallow bowl. You can also use a tall martini glass for extra presentation. Top it all off with the corn nuts, add some hot sauce and lime juice, and serve everything with tortilla chips.
You can also add jalapeños if you like the taste of them, and up the length of time for marinating if you find it necessary.
Sopito with Red Snapper Ceviche
An interesting way to spice up your red snapper ceviche recipe is to mix it all up with sopitos, thus creating a heartier meal. You can use the same ingredients and recipe for the regular snapper ceviche, or you can tweak things up a little bit. A rather easy sopito ceviche recipe includes the following ingredients:
For the ceviche:
- 8 ounces of cubed skinless red snapper fillet
- 1/2 cup of fresh lime juice
- 1 small tomato that you’ll peel, dice, and remove the seeds from
- 2 tablespoons of diced red onion
- 2 tbsp of chopped fresh cilantro
- 1 tablespoon of extra-virgin olive oil
- 1/2 serrano chile, cut into small dices with seeds removed
- Salt and freshly ground black pepper
For the sopito:
- 1 pound of masa harina
- 2 1/2 cups of water
- 1 teaspoon of salt
- Corn oil for frying
For serving:
- 6 halved radishes
- 1/4 cup of micro cilantro
- Salt
- Extra-virgin olive oil
The Recipe: Step-by-Step Guide
- Step 1: Make the Ceviche
Just like in the previous recipe, you basically follow the same rules when it comes to making your ceviche. Since this particular ingredient list is a bit more simplified, simply place the fish into the lime juice and marinate it for about 2 hours in the refrigerator.
Take the bowl out of the fridge and strain the fish while discarding the lime juice. In another bowl, mix and toss onion, cilantro, tomato, chile, and olive oil. Add the fish in and season with salt and pepper according to your taste. Stir everything well again and leave it to sit for about 10 minutes.
- Step 2: Make the Sopitos
You need to make a nice dough, which you can do by combining masa harina, water, and salt in a bowl. Make sure to mix really well until you’re satisfied with the look and feel of your dough. Once you’re done, leave the dough to rest for about 20 minutes. This is where things get interesting as you need to use the dough in order to form small dough cups. In general, it would be best to stick to the 4-inch diameter cups that aren’t taller than half an inch. Flatten out the bottom. Get your pan out and heat the corn oil. Then proceed to fry your dough cups for a couple of minutes, until they become golden.
- Step 3: Serve the Dish
Now that both your red snapper ceviche and sopitos are done, it’s time to serve the dish. As you can probably guess, you have to fill the sopito cups with the ceviche mixture. Top off the sopito ceviche with radish and cilantro, while you can garnish the plate with radish halves, salt, and olive oil.
